Ah, the unassuming envelope of onion soup mix. It's more than just for onion soup (or dip). It adds tremendous flavor (and convenience) in all these recipes.
Seafood Newburg Casserole

ingredients
1/4 cup butter
1/2 pound mushrooms, trimmed and sliced
1 cup chopped green onion
1/3 cup flour
1 cup dry white wine
1 cup light cream
1/3 cup grated Parmesan cheese
1 pound shrimp, shelled and deveined, cooked
1 pound scallops
1 pound flounder fillet, cut into 1" strips
salt and pepper
1/2 cup cornflake crumbs
2 tablespoons melted butter
directions
In a skillet melt butter and saute mushrooms until wilted. Add green onions and saute for a few more minutes. Stir in flour. Gradually stir in white wine and cream. Add cheese.
Stir over low heat until sauce bubbles and thickens. Add shrimp, flounder and scallops. Season to taste with salt and pepper. If mixture is too thick add some milk until desired consistency is reached.
Pour mixture into a 2-1/2 quart casserole. Mix crumbs and melted butter. Sprinkle mixture evenly over casserole. Bake in preheated oven at 350 degrees F for 40-60 minutes or until top is golden brown.
Serve over cooked rice.
