A delicious rice dish made with shrimp or scallops, stewed tomatoes, okra, and long-grain white rice.

2 1/3 cups chicken broth
4 green onions, sliced
1 teaspoon Worcestershire sauce
1/2 teaspoon dried thyme
1/2 teaspoon minced garlic
1/4 teaspoon cayenne pepper
1 can (14.25 ounce size) stewed tomatoes
1 cup long grain rice
1 package (10 ounce size) frozen cut okra, partially thawed
3/4 pound peeled and deveined shrimp or scallops
snipped fresh parsley

directions

Combine the broth, green onions, Worcestershire sauce, thyme, garlic, and cayenne in a large saucepan over medium-high heat. bring to a boil.

Stir the tomatoes, rice, and okra into the broth mixture and bring to a boil again. Reduce the heat to a simmer. Cover the pan and cook for 15-20 minutes or until the rice is tender.

Stir the seafood into the rice mixture. Cover the pan again and let simmer for 3-5 minutes or until the seafood is cooked. Stir to combine. Sprinkle with the parsley and serve immediately.

    Very tasty, very easy! It's got flavor but isn't overly spicy. The rice was done perfectly. I used shrimp but this would be good with scallops or a combo of the two.
