Slow Cooker Red, White and Blue Potatoes

ingredients
8 small red potatoes, cut into small cubes
1 sweet red pepper, cored, seeded and diced finely
1/4 cup finely chopped fresh chives
2 teaspoons salt
1 teaspoon freshly ground black pepper
1/4 cup bacon bits
1 cup milk or soy milk
1/2 cup crumbled blue cheese
directions
Place all ingredients except blue cheese into crock pot. Mix gently. Cover and cook on LOW for 5-6 hours, or until potatoes are tender.
Right before serving, add blue cheese and toss gently.
