ingredients
2 pounds new potatoes, scraped and halved
1/3 cup sliced green onions
1 can condensed beef consomme
1 tablespoon butter or margarine
1 tablespoon flour
salt and pepper
directions
Simmer potatoes and green onions in consomme until done. Drain, reserving liquid.
Melt butter in a saucepan. Blend in flour and gradually stir in hot consomme. Cook, stirring constantly, until thick. Season to taste with salt and pepper.
Pour sauce over vegetables. If desired, garnish with snipped green onion tops.

I liked the change up of using beef broth instead of chicken broth or water when cooking the potatoes. Made a nice rich sauce.
