ingredients
8 large potatoes, peeled
1 large onion, grated
salt and pepper, to taste
1 pint half and half
1 cup butter, melted
paprika
directions
Bring a large pan of water to a boil. Add the potatoes and cook until the potatoes are tender. Drain the potatoes and let cool.
When the potatoes are cool enough to handle, grate them on a box grater and place in a bowl.
Add the onion, salt, pepper, half and half, and melted butter to the bowl. Mix well.
Transfer the mixture to a 9x13 baking dish. Sprinkle the top with paprika. Cover the baking dish with foil and refrigerate overnight (or at least 12 hours).
When ready to cook, preheat the oven to 350 degrees.
Place the baking dish in the oven and bake at 350 degrees F for 45 minutes. Remove the foil during the last 15 minutes of cooking time to lightly brown the top of the potatoes.
Serve hot.
