Delmonico Potatoes With Breadcrumb Topping

ingredients
2 cups potatoes, diced, boiled, and drained
salt and pepper
shredded mild Cheddar or Swiss cheese
buttered bread crumbs
White Sauce
4 tablespoons butter
4 tablespoons flour
2 cups milk
2 tablespoons heavy cream
1/2 teaspoon salt, to taste
1/4 teaspoon white or black pepper to taste
directions
Combine potatoes, white sauce (see below), salt, and pepper. Pour into a greased shallow baking dish. Sprinkle shredded cheese over potatoes, then top with buttered bread crumbs.
Bake at 425 degrees F for about 20 minutes, or until nicely browned.
For White Sauce: Melt butter in a saucepan over low heat, then stir in flour. Cook for 3 minutes, but do not brown.
Stir in milk and continue cooking over low heat, stirring constantly, until sauce begins to thicken. Season with salt and pepper.
Add 2 tablespoons of heavy cream for a richer sauce.

I grew up with delmonico potatoes so this is always a favorite dish

This tastes really good and was very easy to make but the ratio of white sauce to potatoes was off. I ended up only using half of the white sauce. I will definitely make it again but the next time I'll only make half the white sauce.
