recipe tips

For a dairy-free option, use coconut milk or a dairy-free creamer instead of evaporated milk.

Add grated cheese on top before serving for a cheesy twist.

Try different herbs and spices to vary the flavor of the dish.

To make it a one-pot meal, add cooked chicken or ham to the vegetable mixture for added protein.

If you prefer a thicker sauce, mix a slurry using cornstarch and cold water before adding to the crock pot.

Add a sprinkle of paprika or smoked paprika for a touch of smoky flavor to the dish.

common recipe questions

Can I use fresh herbs instead of dried parsley?

You can substitute fresh parsley for dried parsley in this recipe. Just use 2-3 tablespoons fresh parsley in place of the dried. You may also want to reserve a little to stir in when you add the evaporated milk as herbs tend to fade during the long crock pot cooking times.

Can I use other flavor bouillon cubes instead of chicken?

Yes, vegetable or beef bouillon cubes can be used as an alternative, though the flavor will change slightly.

Can I omit the butter to make this dish healthier?

While butter adds richness and flavor to the dish, you can reduce the amount used or omit it entirely for a less rich dish.

Can I add other vegetables to the casserole?

Yes, feel free to add your favorite vegetables like green beans, peas, corn, or bell peppers.

How do I know when the vegetables are fully cooked?

The vegetables are done when they are fork-tender, meaning you can easily pierce them with a fork.

Can I prepare this dish ahead of time?

You can prepare the ingredients and store them in the crock pot insert in the refrigerator overnight. Simply cook it the next day as directed.

How should I store leftovers?

Store leftover casserole in an airtight container in the refrigerator for up to 3-4 days. Reheat gently on the stove or in the microwave.

Can I freeze the casserole?

You can freeze the casserole in a freezer-safe container for up to 2-3 months. Thaw in the refrigerator before reheating.
