ingredients
1 set calf brains
1 tablespoon butter
1 tablespoon flour
1/4 teaspoon salt
2/3 cup milk
1/4 teaspoon chopped parsley
dry toast points, for garnish
directions
Wash brains and remove skin. Cover with cold water, bring to simmering point and simmer for 6 minutes.
Melt butter in a small saucepan. Remove from heat and add flour and salt. Stir until all lumps disappear, then return to stove and cook for 1 minute, stirring all the time, being careful not to let burn.
Add milk all at once and stir until it thickens. Cut the brains into 1/2 inch squares without breaking. Add to the sauce and reheat. Add chopped parsley.
Serve on a hot plate and garnish with points of dry toast.
