Slow Cooker Spiced Beef Tongue

Beef tongue needs to be cooked just right and the crock pot makes that easy. The seasoned cooking liquid not only adds flavor but it helps tenderize the meat.

ingredients

3 pounds beef tongue
2 quarts water
6 whole cloves
6 black peppercorns
2 teaspoons salt
4 bay leaves
1/4 cup vinegar

directions

Combine all ingredients in slow cooker. Cover and cook on low for 10 to 12 hours.

Remove from pot, drain. Cool slightly, remove skin with sharp knife and slice.

    Grew up with my mother cooking beef tongue and I wish I had gotten her recipe because I've never been able to get it just right. This was pretty close to how hers turned out (she cooked the tongue on the stovetop though). I will say that removing the skin is nasty. That is the one thing as a kid that made me leary of tongue but it always tasted so good that I would forget how weird it looked. If you have never cooked beef tongue I would start with this recipe as it had good flavor and was really easy to make.

    Super-easy and soooo delicious! My first attempt at preparing tongue (thuogh I had enjoyed it often as a child) and I plan to do it again and again, using this very recipe. The meat came out tender and delicately seasoned. As a bonus, the skin came off much more easily than I had thought it would - I was expecting somewhat of a struggle!

    Your spiced beef tongue recipe is confusing in that it says it takes 5 hours to prepare, but cooking time ranges from 10 to 12 hours. Needs some clarification. Bill

    • : No, it says it is ready in > 5 hours (more than 5 hours - think back to grade school math class and the "greater than" symbol) which is merely a classification of recipe. Always follow the directions for exact cooking times.

    8 hrs. on low turned the tongue to mush!

    • What model slow cooker are you using? There is one brand that heats far too hot to cook properly. That brand used to be great but the newer models are horrendous. Most recipes you'll find online are meant for slow cookers that heat properly.
