Smothered Alligator

2 pounds alligator meat
1/2 cup celery, chopped fine
1/4 cup cooking oil
1/4 cup shallots, chopped fine
1 onion, chopped fine
1 bay leaf
1 bell pepper
1/4 teaspoon basil, chopped fine
salt and pepper
1/4 cup parsley, chopped fine
directions
Saute onions in oil until golden brown, and bell pepper, and celery. Saute until tender, then add meat and seasonings.
Simmer for 40 minutes. Then add parsley and shallots about 5 minutes before serving.
