Rattlesnake is a lean meat that... yep, tastes like chicken. This pan-fried version provides a nice texture and your favorite dipping sauces bring home the flavor.

ingredients
2 1/2 pounds rattlesnakes, cleaned
salt and pepper, to taste
1/4 cup yellow cornmeal
1/4 cup oil
directions
Cut the rattlesnake into bite sized pieces or desired serving portions. Season the rattlesnake with salt and pepper.
Coat the rattlesnake in the cornmeal and place on waxed paper. Set aside.
Heat the oil in a skillet over medium-high heat. Add the rattlesnake and cook, turning as needed, until browned on all sides.
Serve the fried rattlesnake with dipping sauces such as barbecue sauce, Ranch dressing, white gravy, or ketchup.
