ingredients
2 pounds finely ground alligator meat (or other, if not available)
1 package Italian bread crumbs
1 medium raw egg
1/8 teaspoon salt
1/8 teaspoon cayenne pepper
fresh mushrooms, cut in small pieces (optional)
1/2 teaspoon minced onions
1/2 teaspoon green onions
1/2 teaspoon parsley
1/2 teaspoon bell pepper
directions
Mix all ingredients with your hands while gradually adding bread crumbs.
Roll into whatever size balls you want. Keep a glass of cold water on the side to dip your fingers in occasionally, which will help the meat mixture from sticking to your hands.
Brown the meatballs slightly and drain on paper towels. Then add to red gravy. Cook for 2-3 hours.
Serve over favorite pasta.
