Fried Alligator

ingredients
1 pound alligator
white vinegar or lemon juice
salt
red pepper
2 cups corn meal
1/2 cup flour
shortening
directions
Thinly slice alligator, 1/4" thick by 4" long. Remove all white fatty tissue.
Place gator slices in glass bowl. Cover with vinegar or lemon juice. Add salt and red pepper. Soak for half an hour and no more.
Roll in corn meal and flour seasoned with red pepper. Fry in hot grease in deep fat fryer or iron pot until golden brown (5 minutes).
