1 pound ground chicken
1/2 pound 80/20 ground beef
3 slices fresh bread, crumbled
2 eggs
3/5 blue cheese crumbles
1/4 buffalo wing sauce
3/4 cup celery, finely diced
In a large bowl, mix all ingredients well. Form into 1 inch balls (these are a bit gooey) and bake at 400 degrees F for about 15 minutes.
Remove from oven and brush with more sauce. Place three on a wooden skewer and serve with extra buffalo wing sauce and ranch or blue cheese dressing.

I used all ground chicken since I was serving this with someone who doesn't eat beef. I used only one egg then since chicken is more tender. I agree that the measurements or lack thereof aren't really helpful so I just kinda guessed and went by taste. The meatballs were very tender and good and it was fun having the chicken wing taste but in meatball form.

Some of the measurements seem to be missing from this recipe. For the blue cheese I assumed "cups" and for the buffalo wing sauce I assumed "jar" (although that's vague as well). Either way, the recipe came out quite good and it was great served at our taste-testing party.
