ingredients
1 cup sugar
1/2 cup stick margarine or butter, softened
1 cup canned pumpkin
2 large eggs
2 cups all-purpose flour
1 cup chopped dates
1/2 cup chopped walnuts
2 teaspoons baking powder
2 teaspoons ground cinnamon
1/2 teaspoon ground nutmeg
1/2 teaspoon ground cloves
Browned Buttercream Frosting
1/3 cup butter (do not use margarine or spreads)
directions
Heat oven to 375 degrees F.
Beat sugar and margarine in large bowl with electric mixer on medium speed about 3 minutes or until light and fluffy. Beat in pumpkin and eggs. Stir in remaining ingredients except Browned Buttercream Frosting.
Drop dough by rounded teaspoonfuls about 2 inches apart onto ungreased cookie sheet. Bake 8 to 10 minutes or until edges are set.
Immediately remove from cookie sheet. Cool completely on wire rack. Frost with Browned Buttercream Frosting.
For Browned Buttercream Frosting: Heat butter over medium heat until light brown. Watch carefully because butter can brown and burn quickly. Cool.
