ingredients
1/2 cup snipped dried apricots 1/2 cup butter or margarine 2/3 cup granulated sugar 2/3 cup packed brown sugar 1 teaspoon ground cinnamon 1/2 teaspoon baking soda 1/4 teaspoon ground nutmeg 1 large egg 2 cups all-purpose flour 40 pecan halves
directions
Pour enough boiling water over dried apricots to cover; let stand for 20 minutes. Drain well.
Beat butter or margarine in a large mixing bowl with an electric mixer on medium to high speed for 30 seconds. Add granulated sugar, brown sugar, cinnamon, baking soda, and ground nutmeg; beat till combined. Beat in egg. Beat in as much of the flour as you can with the mixer. Stir in remaining flour and apricots. Drop dough from a rounded teaspoon 2 inches apart on an ungreased cookie sheet. Press a pecan half into top of each cookie.
Bake in a 375 degrees F oven for 10 to 12 minutes or till edges are lightly browned. Cool on wire rack.
