Mint Chocolate Macaroons

ingredients
1 package (9 ounce size) mint-chocolate chips
3 large egg whites
1/4 cup granulated sugar
1 package (7 ounce size) flaked or shredded coconut
directions
Preheat oven to 350 degrees F. Line baking sheets with foil or parchment paper.
Microwave chocolate chips in a small, microwave-safe bowl on HIGH (100% power) for 1 minute. Stir. Microwave at additional 10 to 20 second intervals, stirring until smooth. Cool to room temperature.
Beat egg whites in a large mixer bowl until foamy. Gradually add sugar and beat until stiff peaks form. Fold in melted chocolate and coconut.
Drop by rounded tablespoon onto prepared baking sheets. Bake for 15 to 18 minutes. Cool on baking sheets for 5 minutes. Remove to wire racks to cool completely.
