Swiss Butter Cookies

ingredients
1 cup unsalted butter
1 cup granulated sugar
3 eggs, at room temperature
1 pinch salt
1 lemon, zest of
3 1/2 cups flour
1 egg yolk, for glaze
directions
Beat butter in an electric mixer until it reaches a smooth consistency. Beat in sugar, then eggs. Then beat in salt and lemon zest.
Add flour and gently mix until incorporated, making sure you do not over-mix. Wrap in plastic wrap and press flat. Refrigerate at least 2 hours.
Roll out on a well-dusted surface to 1/4 inch thick and cut out shapes as you like. Brush cookies with lightly beaten egg yolk. (For best results, brush twice.)
Bake at 400 degrees F approximately 10 minutes or until golden brown. Cool on rack.
