Tortellini With Roasted Garlic Sauce

ingredients
1 large bulb garlic
1 package (9 ounce size) fresh tortellini pasta
3 tablespoons olive oil
1/2 cup reduced-fat mayonnaise
1/2 cup nonfat sour cream
1/3 cup grated Parmesan cheese
2 tablespoons hot sauce
directions
Preheat oven to 350 degrees F.
Cut 1/2-inch off top of garlic and discard. Peel outer skin, leave cloves intact. Wrap garlic in foil; bake 1 hour or until tender. Cool.
Cook tortellini according to package directions. Rinse with cold water and drain well.
Heat olive oil in skillet over medium heat. Fry pasta in small batches, cooking until lightly browned. Drain on paper towels.
Separate cooled garlic into cloves; pinch each clove so roasted flesh comes out. Place cloves in blender or food processor. Add mayonnaise, sour cream, Parmesan cheese and hot sauce. Cover and puree until very smooth.
Spoon into small saucepan; cook over very low heat until hot and bubbly, stirring constantly. Pour into small serving bowl.
Arrange pasta on serving platter. Serve with sauce.

I thought it was an interesting recipe! I hosted a dinner party and people loved it! While I was cooking it, however, I smelled too much of it and thought that people wouldn't even touch it (the mayo and sourcream!). I used extra roasted garlic and about 5 drops of tabasco sauce! It was a success...give it a try when you can serve it to other people! I also used a tortellini with a sausage flavor to it! I think it was a good touch! Try THIS RECIPE!!

Very good, best served soon after frying the tortellini (I had some leftover the next day and they were too chewy when re-heated, although the dipping sauce held up well). Will make again!!

This was excellent. The sauce was unlike anything I have ever tasted. I'll be bringing this to the next potluck, for sure! Try it, especially garlic lovers! You won't be disappointed. To reheat any leftovers, try crisping them in 1 tbs of olive oil for about 5 minutes over medium heat. It's not a great idea to microwave them.
