It may look like a sad little package shoved in the back of your freezer, but frozen spinach actually has a lot of culinary uses (and some may surprise you).

A vegetarian delight! Mushrooms and spinach make this a healthy dish you'll feel great about, garlic and onions provide wonderful base flavor, and parmesan on top sets the pasta off just right. A chicken breast could be added for any carnivores.
12 ounces pasta such as rigatoni or rotini
1 tablespoon olive oil
3 cloves garlic, minced
1 onion, chopped
1 teaspoon dried thyme
4 cups sliced fresh mushrooms
2 tablespoons all-purpose flour
2 cups milk
2 cups chopped fresh spinach
1/2 cup chopped fresh basil or parsley
1 teaspoon salt
1/2 teaspoon black pepper
freshly grated Parmesan cheese
Cook the pasta in salted water as directed on package. Drain and set aside (keep it warm while making the sauce).
Meanwhile, heat the olive oil in a large skillet over medium-high heat. Add the garlic, onion, and thyme. Stir and cook for 1 minute.
Add the sliced mushrooms to the skillet and cook, stirring, for 8 minutes or until mushrooms are soft and browned.
Sprinkle the vegetables in the skillet with the flour and mix well. Slowly add the milk to the skillet, stirring constantly. Bring the sauce to a boil and cook, stirring frequently, for 4-5 minutes or until the sauce thickens.
Add the fresh spinach, basil, salt, and pepper to the sauce and cook for 2-3 more minutes (just long enough for the spinach to wilt).
Toss the sauce with the warm pasta. Top individual servings with Parmesan cheese.

Tasty! The use of basil or parsley (your preference) will change the final flavor slightly - but either one works well. The fresh parmesan on top is delicious.
