5 red potatoes, cut in quarters
1 large onion, sliced
2 pounds boneless pork roast
1 jar (16 ounce size) red cabbage with apple or sweet and sour cabbage
1/2 cup apple butter
1 teaspoon garlic powder
salt and pepper, to taste

directions

Place the potatoes and onion in the bottom of the crock pot. Place the pork roast on top of the vegetables.

In a bowl, combine the red cabbage, apple butter, and garlic powder. Mix well and pour over the pork roast. Season as desired with salt and pepper.

Cover the crock pot and cook on low heat for 5-7 hours or until the pork is cooked through.

Remove the pork from the crock pot and place on a cutting board. Slice as desired. Serve with the vegetables.
