Pork With Ranchero Sauce

ingredients
1/2 teaspoon oregano
2 cloves garlic, minced
1/4 teaspoon salt, optional
1 pound boneless pork sirloin roast, fat trimmed
1 1/4 teaspoon virgin olive oil
3/4 onion, chopped
1 cup recipe-ready crushed tomatoes
1/3 cup salsa
2 tablespoons cilantro or parsley, chopped, PLUS"PLUS" means this ingredient in addition to the one on the next line, often with divided uses

Preheat oven to 350 degrees F.
Rub oregano, garlic, salt and pepper to taste over pork roast. Place in roasting pan. Roast in oven 25-30 minutes per 1 lb., or until meat thermometer registers 160 degrees F internally.
While meat is roasting, heat oil in a heavy saucepan over medium heat. Saute onion 4-5 minutes or until lightly brown. Stir in tomatoes and salsa and simmer about 5 minutes, stirring frequently.
When pork is done, remove from oven and let stand 5 minutes before slicing. Serve slices of roast pork with sauce and sprinkled with cilantro.

The pork was tasty and perfectly done. We're not sure why you basically go through the trouble of making salsa and then ADD salsa to it, but it tasted good :) You could just heat some of your favorite salsa and skip the rest of the work.
