Slow Cooker Pork Roast Mexican Style

ingredients
3 cans (10 ounce size) red enchilada sauce
1 large onion, chopped
3 teaspoons jarred minced garlic in oil
1/2 teaspoon black pepper
2 1/2 pounds boneless pork loin roast, trimmed
1/2 cup snipped fresh cilantro (add more if you like)
2 tablespoons lime juice
directions
Mix everything except the pork, cilantro and lime juice in the slow cooker. Add pork.
Cover and cook on low for 7-9 hours. Take out the pork and shred it. Add cilantro, lime juice and pork back to the slow cooker.
Serve in rolled up tortillas with an optional dollop of sour cream.
