Herb Roast Sirloin Tip With Sauerkraut

ingredients
4 slices chopped bacon
1 cup onion, diced
2 packages sauerkraut, drained
1 cup chunky applesauce
2 packages sauerkraut, drained
2 bottles (12 ounce size) beer
2 pounds pork sirloin tip roast or ribs of choice
2 teaspoons kosher salt
2 teaspoons cracked black pepper
2 tablespoons crushed or minced garlic
1 tablespoon chopped fresh rosemary
2 tablespoons chopped fresh thyme
2 tablespoons fresh sage, chopped
directions
Heat a large skillet and cook bacon until crispy. Add onion and saute several minutes with bacon and drippings. Add drained sauerkraut, applesauce, and beer. Bring to a boil and simmer for about 15 minutes.
In the meantime, combine salt, pepper, garlic and fresh herbs and rub on roasts. Put sauerkraut in a baking dish and place seasoned roasts on top.
Place in a 325 degrees F oven and roast uncovered for 1 to 1 1/2 hours or until internal temperature of pork is 150 degrees F.
Allow to sit for 15 minutes, then carve and serve with sauerkraut.
