It may look like a sad little package shoved in the back of your freezer, but frozen spinach actually has a lot of culinary uses (and some may surprise you).
Fresh Boston Butt Ham or Pork Shoulder

ingredients
1 Boston butt ham or pork shoulder
6 cloves garlic, crushed, peeled
paprika, salt and black pepper
directions
Preheat oven to 400 degrees F.
Cut slits into the fat of the pork and press the garlic into them. Sprinkle with seasonings.
Place pork on rack in heavy duty pan with fat side down. Add about 1 quart water to bottom of pan. Bake for about 40 minutes. Baste several times. Turn pork fat side up. Reduce heat to 325 degrees F. and bake until it registers done on a meat thermometer. Baste occasionally. Remove from heat. Let rest and cool (or cover and refrigerate). Slice and serve.
