13 ounces tuna, drained and gently flaked
1/4 cup dry bread crumbs
1/4 cup grated Romano cheese
2 tablespoons butter, melted
Preheat the oven to 350 degrees F.
Cook the egg noodles in boiling water until al dente. Drain well then transfer to a large bowl.
Add the pimientos, mushrooms, sour cream, milk, chives, salt, and pepper. Mix well. Stir in the tuna mixing just to combine. Transfer the mixture to a 2-quart baking dish.
Combine the bread crumbs, cheese, and butter. Mix well then evenly sprinkle the crumb mixture over the top of the noodle mixture.
Place the baking dish in the oven and bake, uncovered, at 350 degrees F for 35-40 minutes or until bubbly in the center.
Serve hot.
Don't overcook the noodles before baking, as they will continue to cook in the oven.
Top the casserole with additional cheese before baking.
For a crunchy topping, mix in some crushed crackers or potato chips with the breadcrumb mixture.
If the casserole seems dry, add a bit more sour cream or milk before baking.
