Ground beef, elbow macaroni, and a tangy tomato-based sauce create this crock pot version of beefaroni.
2 cups elbow macaroni
3 pounds ground beef
1 cup chopped onion
2 cloves garlic, minced
1 1/2 cup ketchup
1 cup chopped green bell pepper
1/2 cup water
4 tablespoons brown sugar
4 tablespoons prepared mustard
4 tablespoons white vinegar
4 tablespoons Worcestershire sauce
3 teaspoons chili powder
1 cup shredded cheddar cheese
salt and pepper, to taste
Cook the macaroni to al dente as directed on the package. Drain well when cooked.
Meanwhile, heat a skillet over medium heat. Add the ground beef and onion. Cook, stirring, until the beef is cooked and the onion is tender. Drain off any excess grease.
Add the beef mixture, cooked pasta, garlic, ketchup, green pepper, water, brown sugar, mustard, vinegar, Worcestershire sauce, and chili powder to the crock pot. Stir well.
Sprinkle with the cheese. Cover the crock pot and cook on high heat for 1-2 hours or until everything is heated through and the cheese is melted. Stir well.
Season with salt and pepper if desired before serving.

Didn't find this too sweet as one review said. Maybe it was the brand of ketchup they used because it only has a small amount of brown sugar in the recipe. We liked this a lot. I agree, it's comfort food. Not fancy, just good.

SUPER GOOD! WE LIKED THE SWEETER TASTE TO IT (REMINDED ME OF THE SLOPPY JOES MY MOM MADE AS A KID THAT HAD A SWEETER FLAVOR). USED MACARONI COOKED AL DENTE AND IT DIDN'T TURN OUT MUSHY.

I tried it with cooked elbow macaroni - it came out mushy... did you mean to say uncooked? Also way to sweet! I think it was the combo of both the ketchup & sugar... next time I would used tomatoes or tom paste
The macaroni is supposed to be cooked (uncooked wouldn't get done in an hour and without a lot more liquid). If you overcooked the macaroni to begin with then it might get mushy, but ours turned out fine. It is on the sweet side but it may also depend on the ketchup you use as some are definitely sweeter than others. Plain tomato sauce would work fine as a substitute if you wish.

I love this recipe and I actually use it minus the pasta for sloppy joes too!
