Also known as a sunchoke, this vegetable is a member of the sunflower family (and not related to the other kind of artichokes). It is nutty, sweet, and crunchy. They can be eaten raw or cooked.

Jerusalem artichokes
lightly salted water
salt
black pepper
fresh lemon juice
Peel the artichokes and place in a pan of lightly salted water over medium-high heat. Bring to a boil then reduce the heat to low, cover the pan, and let simmer for 30-60 minutes or until the artichokes are soft.
Drain off the liquid then season the artichokes to taste with salt, pepper, and lemon juice. Serve hot.
