Jerusalem artichokes lightly salted water salt black pepper fresh lemon juice
directions
Peel the artichokes and place in a pan of lightly salted water over medium-high heat. Bring to a boil then reduce the heat to low, cover the pan, and let simmer for 30-60 minutes or until the artichokes are soft.
Drain off the liquid then season the artichokes to taste with salt, pepper, and lemon juice. Serve hot.
