- add review
- #31977

ingredients
1/3 cup whole black peppercorns (or to taste)
2 New York strip steaks (10 ounces each)
4 tablespoons butter
2 ounces whiskey
1 cup whipping cream
3 tablespoons Worcestershire sauce
salt, to taste
directions
In blender or food processor, process peppercorns on high setting until finely crushed, about 15 seconds. Roll steaks in ground pepper, pressing it into steaks with palm of hand.
Melt butter in medium skillet and saute steaks to desired doneness. Remove pan from heat, reserving juices. Place cooked steaks in warm serving dish and set aside.
To make sauce: Place pan with reserved juices over medium heat. Add whiskey, cream and Worcestershire sauce; reduce mixture until thickened, about 5 to 8 minutes. Add salt to taste.
Pour warm sauce over steaks and serve.
cook's notes
Saute steaks in a well-ventilated cooking area as pepper crusted steaks will produce smoke.

Turned out really well...a bit too much pepper used, but that's my fault...I used center cut filets, and wraped with bacon...it was very much appreciated, with carrots and green beans...
