Ah, the unassuming envelope of onion soup mix. It's more than just for onion soup (or dip). It adds tremendous flavor (and convenience) in all these recipes.

ingredients
3 tablespoons olive oil
1/4 cup red bell pepper, diced
1/4 cup green bell pepper, diced
1/4 cup celery, diced
1/4 cup onion, diced
1/4 cup carrots, diced
1 tablespoon garlic, crushed
1/4 cup mushroom buttons, sliced
1/2 cup corn
1 cup canned tomatoes, diced
1/4 cup sliced black olives
1/2 teaspoon chili powder
1/8 teaspoon cayenne pepper
1/4 teaspoon thyme
1/4 teaspoon oregano
1/4 teaspoon black pepper
1/4 teaspoon cumin
1/8 cup jalapeno peppers
1/4 cup tomato paste
2 cups chicken stock or broth
2 tablespoons cornstarch, MIXED WITH
2 tablespoons water
1/2 cup canned Great Northern beans
1/2 cup canned pinto beans
1/2 cup canned black beans
1/2 cup canned kidney beans
8 ounces angel hair or thin spaghetti
directions
In a 4 qt. saucepan, heat oil and add fresh veggies except corn. Saute until tender. Add corn, tomatoes and olives. Add spices; cook 1-2 minutes.
Add jalapeno peppers, tomato paste and stock; bring to boil. Add cornstarch mixture and cook an additional 5 minutes until thickened.
Add beans; simmer until heated through. Cook pasta in a separate pot; drain. Serve pasta with chili in the same bowl.

The end result was great, but the prep work involved was a lot of work for me personally. I think perhaps the "cooking time" is a little misleading. But the recipe was great.
