Fix up a nacho snack Don Pablo's style! Crisp tortilla chips are topped with refried beans, cooked chicken, cheese, sour cream, tomatoes, and jalapenos.

ingredients

10 large flat tortilla chips
3/4 cup grated cheese, divided
1/2 cup refried beans, warm
1/2 cup cooked chicken, chopped, kept warm
1/4 cup sour cream
3 tablespoons diced tomatoes
shredded lettuce
1 tablespoon sliced jalapenos

directions

Place chips on large oven-proof plate or baking dish.

Spread some of the refried beans on each chip. Sprinkle with 1/2 cup of the cheese. Sprinkle cooked chicken on top. Evenly cover with remaining cheese.

Place under broiler or in 450 degrees F oven until cheese melts.

Remove from oven and place chips on a serving plate. Drizzle with sour cream and sprinkle with diced tomatoes and slice jalapenos. Serve with shredded lettuce on the side of the plate.

    Each bite of the nachos has a little bit of everything! Easy to make and tastes great. Good way to use up some leftover chicken.
