It may look like a sad little package shoved in the back of your freezer, but frozen spinach actually has a lot of culinary uses (and some may surprise you).

- add review
- #40361
30-60 minutes
ingredients
1/2 cup unsalted butter, at room temperature
3 cloves garlic, coarsely chopped
1 tablespoon finely minced peeled ginger, finely chopped
1/4 teaspoon salt
1 pinch ground red pepper
1 loaf long thin French or Italian bread
directions
Preheat the grill to medium-high.
In a small bowl, stir together the butter, garlic, ginger, salt and red pepper.
With a sharp knife, split the bread in half lengthwise. Spread the butter mixture onto the cut sides of the loaf and put the halves back together. Wrap tightly in foil.
Grill the bread, turning occasionally, for 10 to 15 minutes, until heated through. Unwrap, cut the bread into slices, and serve immediately.
VARIATIONS: For an infusion of nutty sesame flavor, add 1 tablespoon toasted sesame seeds or 1 tablespoon toasted sesame oil to the butter mixture. Or, for some zing, add 2 tablespoons grated lemon zest.
