1/2 pound thick-sliced bacon
4 cans (1 pound 3 ounce size) baked beans
2 teaspoons dry mustard
1/4 teaspoon ground ginger
1/4 cup strong coffee
1/2 cup firmly packed dark brown sugar

Combine beans, mustard, ginger, coffee, brown sugar, and bacon. Turn into a 3-quart casserole or 9 x 13-inch baking dish. Bake, covered, in a 350 degrees F oven for 45 minutes.
Stir in rum. Cut pineapple slices in half and arrange over top. Return to oven, uncovered, for about 25 more minutes or until top is browned.

Pumpkins aren't just for pies or Halloween decorations. These large, orange gourds - while naturally sweet - also work well in savory dishes. They pair well with poultry and pork (and especially bacon) and their creamy-when-cooked texture blends easily into soups.
