ingredients
6 medium potatoes, peeled, in chunks
2 eggs (or equivalent amount of egg substitute)
1 medium onion, quartered
1/3 cup flour, loosely packed
1 teaspoon baking powder
1 1/2 teaspoon salt
1/2 teaspoon sugar
black pepper, to taste
directions
Dry potatoes on paper towels. Blend eggs, potato chunks and onion quarters in food processor or blender until smooth. Do not over-process. Pour potato mixture into a bowl and add the flour, baking powder, salt, sugar and pepper. Mix thoroughly.
Gently heat a non-stick frying pan. Add a small amount of butter to the pan. Put the batter into the frying pan to form pancakes of the desired size. Cook on both sides until lightly golden brown.
