ingredients

5 boiled potatoes
4 tablespoons jalapeno peppers, chopped
2 eggs
ground black pepper, to taste
salt, to taste
oil of choice, as needed
sour cream

directions

Julienne potatoes with the skin on. Lightly beat eggs.

In a mixing bowl, fold all ingredients (except oil and sour cream) together, and pat into 5 ounce cakes.

Fry each cake (in oil of choice) until golden brown.

Serve with sour cream.
