ingredients
24 large eggs
3/4 pound green bell pepper, diced
1/2 pound green onion, diced
6 pounds hash brown potatoes
directions
Place eggs in mixer and blend.
Add peppers and onions and mix thoroughly.
Add potatoes and mix slowly until well combined.
For each serving scoop 1/3 cup and drop on oiled 375 degrees F. griddle. Cook 2-3 minutes per side until browned and crispy. Keep warm until ready to serve.

Marking this down a star because it says it makes 24 pcs but that should maybe be 24 people. I changed the recipe to use 1 pound of hashbrowns and 4 eggs. It also needed salt and pepper but I usually assume that with any recipe that doesn't list it but I wanted to point it out in case anyone didn't think to add that. Otherwise I liked the simplicity of it and the cooking directions worked fine.
