- #64320
30-60 minutes
ingredients
5 tablespoons vegetable oil
1 teaspoon mustard seeds
1 piece (1-inch size) fresh ginger, peeled & sliced thin
1 onion, sliced
1 teaspoon turmeric
1 green chile, chopped
1 large cauliflower, trimmed, cut into florets
1 teaspoon salt
1/2 lemon, juiced
chopped cilantro, optional
directions
In a large saucepan, heat the oil over moderately high heat. Add the mustard seeds, reduce the heat to moderate and cover the pan.
When the seeds stop spattering, remove the lid and add the ginger, onion, turmeric and green chile. Fry stirring occasionally for 3 minutes.
Add the cauliflower and salt and stir well. Sprinkle the lemon juice over the top, cover pan, reduce heat to low and cook cauliflower for 20 minutes, or until florets are tender, but not mushy.
Turn contents of pan into serving dish. Sprinkle with cilantro and serve.

Pumpkins aren't just for pies or Halloween decorations. These large, orange gourds - while naturally sweet - also work well in savory dishes. They pair well with poultry and pork (and especially bacon) and their creamy-when-cooked texture blends easily into soups.
