Chipotle Red Beans And Rice Casserole

ingredients
1 cup uncooked regular long grain rice
1 cup frozen whole kernel corn
1 can (15 ounce size) spicy chili beans in sauce, undrained
1 can (14 ounce size) vegetable broth
1 can (14.5 ounce size) diced tomatoes with green chilies, undrained
1 canned chipotle chile in adobo sauce, chopped
1 cup chili cheese flavored corn chips
1 cup shredded Monterey Jack cheese
directions
Heat oven to 350 degrees F. Spray a 2 qt. casserole or 8" square glass baking dish with cooking spray.
In a baking dish, mix rice, corn, beans, broth, tomatoes and chili. Cover casserole with foil. Bake for 1 hour.
Uncover and stir well. Sprinkle with chips and cheese. Bake uncovered for 10 to 15 minutes longer or until bubbly and rice is tender.
