Pancake Chicken Nuggets

Pancake battered nuggets kissed with maple syrup split the combo of sweet and savory right down the middle.

ingredients

4 boneless, skinless chicken breast halves
1 cup pancake mix
2/3 cup milk
1 teaspoon salt
1/4 teaspoon black pepper

directions

Cut each chicken breast into 1 1/2-inch cubes.

Heat oil to 350 degrees F in a deep fryer or deep skillet (about 2-inches deep if using a skillet).

Combine the pancake mix, milk, salt, and pepper in a shallow dish. Dip the chicken cubes in the pancake mixture, letting any excess drip off.

Add the chicken to the hot oil and cook, turning as needed, until golden brown, about 5 minutes. Cook the chicken in batches if needed.

Remove from the oil with a slotted spoon and let drain on paper toweling. Serve the chicken nuggets hot with your favorite dipping sauce (ranch dressing, ketchup, maple syrup, sweet and sour, etc).

    Is there an air fryer recipe for this - my doctor says I need to cut down on my fried foods. I am sure others would be interested in that as well

    • Wet batters like this don't really work well in air fryers. Air fryers are basically convection ovens. We have a couple different dry coating nugget recipes on the site if you search for "baked chicken nuggets". Those can be adapted to work in air fryers most easily.

    It tastes like a funnel cake wrapped around chicken and something about it was very unsettling. Also the batter cooks so fast that it begins to burn before the chicken can cook through, even though I cut it into smaller cubes than recommended.

    • Make sure you are using plain pancake mix, not the "complete" kind - that could make it taste too sweet and possibly cause it to burn since it contains more sugar.
