Shrimp And Fish Casserole

ingredients
1 pound white fish (cod, sole or flounder)
2 cloves garlic, minced
3 tablespoons water
1/2 teaspoon salt
lemon juice to taste
1 tablespoon Dijon mustard
fresh dill or parsley
1 medium thinly sliced onion
1 tablespoon butter
1 dash green bell pepper
1 cup sour cream
1 cup cooked baby shrimp
directions
Wipe fish with damp cloth, cut into serving pieces.
Saute onion in butter in heavy saucepan until soft. Add garlic and fish. Sprinkle with water, add salt and pepper.
Heat to simmer. Cook 10 to 20 minutes depending on fish used and serving size. Do not over-cook. Sprinkle with lemon juice.
Mix sour cream and mustard. Just before serving, add sour cream mixture and baby shrimp to casserole. Heat until hot without stirring. Sprinkle with dill or parsley.

I made this solely because I had all the ingredients and didn't expect much from it (just needed something for dinner without having to run to the store). Impressively, it turned out quite tasty. I served it with some white rice. I used flounder in it.

best best best!!! OMG the best yummy yummy! if you like seafood you must try this super good food that taste like it came from a fancy joint made at home in less then an hour!

While the recipe suggests a white fish, salmon would work well too. "Poaching" the fish makes for a very tender and flaky entree. If you don't have baby shrimp, cut larger shrimp into smaller pieces.
