Mixed Seafood Casserole

ingredients
1/2 teaspoon fresh garlic, sliced
1/2 teaspoon fresh shallots, sliced
3 tablespoons olive oil
10 tiger shrimp, peeled and deveined
6 scallops, rinsed
8 mussels, rinsed
8 clams, rinsed
1/2 cup white wine
3 small red potatoes, blanched
2 cups canned plum tomatoes with juice
salt and pepper, to taste
2 teaspoons fresh parsley, chopped
2 pieces fresh thyme, chopped
directions
Lightly brown garlic and shallots in olive oil in two-quart aluminum or stainless steel casserole pot. Add seafood and simmer, two to three minutes.
Add wine and reduce liquid by half, about two to three minutes. Add potatoes, tomatoes and salt and pepper, to taste. Bring to a boil, then remove from stove top.
Cover with aluminum foil and bake in 350 degrees F oven, seven to 10 minutes, until shrimp become opaque. Remove from oven, uncover, and sprinkle parsley and thyme across casserole.
