ingredients
6 slices bacon
4 tablespoons butter
2 shallot, chopped fine
1/2 small onion, chopped fine
2 1/2 cups potato, boiled and diced
2 1/2 cups clams, canned, minced
salt and pepper, to taste
4 egg yolks
3/4 cup cream
2 tablespoons butter, softened
directions
Saute bacon until crisp. Drain and crumble.
Pour off bacon fat and melt butter in skillet. Saute shallots and onion. Add potatoes, increase heat to medium and cook until underside is browned.
Mix in clams and bacon. Salt and pepper to taste. Press flat with a spatula.
Beat egg yolks with cream. Pour over clam/potato mixture. Cover skillet and cook for three minutes, until eggs just set.
Dot hash with softened butter. Brown under broiler. Serve immediately.
