This savory clam casserole makes and easy entree or side dish thanks to the slow cooker.

ingredients

4 large eggs, well beaten
1/4 cup butter, melted
1/3 cup milk
1 teaspoon salt
18 saltine crackers, crushed
20 ounces canned minced clams, drained
1/2 cup minced onion
1/4 cup minced green bell pepper

directions

Grease the inside of a crock pot.

Whisk together the eggs, melted butter, milk, and salt. Mix well. Stir in the crushed saltines and mix to coat the saltines in the egg mixture.

Stir the clams, onion, and bell pepper into the mixture. Transfer the clam mixture to the greased crock pot.

Cover the crock pot and cook on low heat for 1-2 hours or until the casserole is set and heated through. Serve hot, with hot sauce, if desired.
