Broiled Lemon & Garlic Tiger Prawns

ingredients
1 1/2 pound tiger prawns, peeled and deveined
1 cup butter
1 teaspoon minced garlic
1 1/2 tablespoon lemon juice
3 tablespoons grated Parmesan cheese
directions
Preheat the broiler.
Take a sharp knife and insert it into the underside of the prawn starting from the head end. Make a cut from head to tail without cutting all the way through. Carefully open the prawn like a book and flatten it out. Repeat with remaining prawns.
Place the prawns in a single layer on a boiler pan, tail-end up.
Combine the butter, garlic, and lemon juice in a saucepan over medium heat. Cook, stirring, until melted and the garlic is soft.
Pour 1/4 cup of the butter mixture into a bowl. Reserve the rest for dipping.
Brush the garlic butter mixture evenly over the prawns. Sprinkle them with the Parmesan cheese.
Place the broiler pan on the top rack of the oven. Broil for 4-5 minutes or until cooked through. Do not overcook.
Serve the prawns with the reserved butter for dipping.
