1 chicken, cut into pieces and skinned if desired
1 can (8 ounce size) pineapple chunks, drained, juice reserved
1/2 cup soy sauce
1/4 cup vinegar
1 tablespoon ketchup
garlic powder
1/2 teaspoon ground ginger
1/4 teaspoon black pepper, freshly ground
1/2 cup water
2 tablespoons cornstarch
1 bell pepper, cut in pieces

directions

In a saucepan, put pineapple juice, brown sugar, soy sauce, vinegar, ketchup, garlic powder, ginger, and pepper. Bring to a boil. Mix the water and cornstarch together and then add to the saucepan. Cook sauce just until thickened. Place chicken in a 9 x 13-inch baking pan. Place the pineapple chunks on chicken. Pour the sauce over all.

Bake at 400 degrees F for 45 minutes. Last 10 minutes add the green pepper.

    This recipe is one of my family favorites! I noticed the brown sugar too, so I just added about 5 tbsps and it seemed to come out good. I will suggest one additional thing. Try and add some maraschino cherries. It tastes great and looks pretty.

    The recipe was easy and very tasty but there was no amount shown for the brown sugar. I guessed with about 1/3 a cup and it came out okay. I also used breasts instead of cut pieces. It was very good.
