Cabbage And Ground Pork Casserole

ingredients
1/2 head cabbage
1 1/2 cup ground pork
1 small green bell pepper
1 small onion
1/2 cup cooked rice
1 teaspoon salt
black pepper
2 fresh tomatoes
olive oil
directions
Mince the onion and the pepper.
Brown the ground pork and mince if not finely chopped. Mix the pork, onion, pepper, seasonings, and rice.
Cut enough leaves from the head of cabbage to cover two layers of a casserole bowl; drop into boiling salted water for 2 minutes; drain.
Cover the bottom of the casserole bowl with cabbage leaves. Cover the leaves with a layer of mixture.
Cover the mixture with a second layer of cabbage leaves. Cover the second cabbage leaf layer with a second layer of mixture.
Cut the tomatoes in sections and line them on the edges and the center of the dish.
Lightly drizzle olive oil on the the tomato sections.
Bake in a 375 degrees F oven for 60 minutes. Cover casserole for the first 30 minutes; uncover for the last 30 minutes.

This was sort of like an unstuffed cabbage roll casserole. I liked that it used pork though instead of beef. I actually used pork italian sausage which has a few more spices in it becausae we like spicy foods.
This is GREAT! At first it looked rather ordinary but indeed and in taste, it is yummy, nourishing and everyone will like it - not gourmet food but solid good stuff. Warmed up the next day is just as good. Ingredients are things we have around the house so that makes it easier. In sum, it's economical, easy, quick to prepare and will please young and old alike.
