Broiled Teriyaki Flank Steak

ingredients
12 ounces flank steak
1/4 cup soy sauce, plus more for serving if desired
1/4 cup dry sherry
2 tablespoons light sesame oil
1 tablespoon grated fresh ginger
1 teaspoon finely chopped garlic
1 teaspoon brown sugar
1/2 teaspoon freshly ground black pepper
3 tablespoons butter
6 cups thinly sliced yellow onions

Several hours in advance, slash the steak deeply on the diagonal and cut it into strips 2 inches wide.
In a medium bowl or plastic sealable bag, combine the soy sauce, sherry, sesame oil, ginger, garlic, sugar and pepper. Add the steak strips to the bowl and marinate them.
When you're ready to broil the steak, adjust the broiler rack to 2 inches from the heat. Preheat the broiler.
Meanwhile, in a large heavy skillet, melt the butter over medium-high heat. Add the onion slices to the pan and cook them, tossing with a fork from time to time, until the onions are soft and golden but not browned, about 8 to 10 minutes. Set them aside, but keep them warm.
Remove the steak slices from the marinade and arrange them on the broiler pan. Broil, turning once and brushing with marinade (if desired), for about 10 minutes total.
To serve, arrange the steak slices on a platter and pile the onions over the steak.
Pass soy sauce for seasoning if desired.
