Camaron Seco Con Frijoles Blancos (Mexican Dried Shrimp And White Beans)

ingredients
1 1/2 cup dried shrimp
2 large tomatoes, skinned
OR
1 can plum tomatoes
1 small onion, roughly chopped
4 cloves garlic, chopped
3 tablespoons sunflower oil, sesame seed oil, or pumpkin seed oil
2 1/2 cups cooked, drained white navy beans
2 epazote leaves or dill fronds
directions
Put the dried shrimp to soak in a little warm water for 10 minutes, then drain.
Blend the tomatoes to a thick pulp along with the onion, garlic, and a little water until smooth.
Heat the oil in a frying pan, add the pureed tomato, and simmer until thick, about 15 minutes.
Stir the tomato mixture into the soft beans along with the epazote or dill. Stir in the shrimp, add a cupful of boiling water, and simmer until the shrimp are tender, 10 minutes, no more.
