ingredients
1 tablespoon oil
2 cloves garlic, crushed
1 tablespoon chopped parsley
1 tablespoon sugar
1/2 teaspoon salt
1/2 teaspoon dried oregano
1/4 teaspoon dried basil
1/8 teaspoon black pepper
1 dash cayenne pepper
1 can (1 lb., 12 ounce size) Italian tomatoes, undrained
2 pounds raw shrimp
4 cups hot cooked white rice
directions
Slowly heat oil in large heavy skillet. Add garlic, saute until golden, about 3 minutes. Remove from heat.
Add parsley, sugar, salt, oregano, basil, pepper, cayenne and tomatoes. Break up tomatoes with spoon, bring to boil. Reduce heat, simmer, uncovered for 25 minutes, stirring occasionally.
In a glass pan, cover shrimp with cold water. Bring just to boil. Drain shrimp and devein. Add shrimp to sauce, simmer, stirring just until heated through, about 10 minutes.
To serve, spoon rice around edge of a large round platter. Mound shrimp and sauce in center of platter.
