ingredients
1/2 cup sliced celery
1/2 cup sliced okra
1/2 cup chopped green bell pepper
1/2 cup sliced onion
1 can (14.5 ounce size) diced tomatoes with green pepper and onion
1/4 teaspoon ground red pepper
1 pound mild white fish fillets, 1/2 to 1 inch thick
1/4 teaspoon hot sauce (optional)
2 cups cooked rice
1 tablespoon olive oil
green onion (optional)
directions
Preheat oven to 425 degrees F.
In large skillet, saute celery, okra, green pepper and onion in hot oil 5 minutes or until tender. Stir in tomatoes and red pepper.
Place fish in large baking dish. Spoon tomato mixture over fish. Bake 6 to 8 minutes or until fish flakes with a fork. Season with salt and pepper to taste and hot sauce, if desired.
Serve over rice. Garnish with green onions, if desired.
